Corner Bakery Café is coming to Midtown Fort Collins this fall. With locations on the east and west coast, the franchise is making its first appearance in Northern Colorado, replacing the previously vacant Perkins restaurant on College Avenue. Located just west of the Foothills Mall, the Corner Bakery Café will be a great addition to the community.
The area has a broad residential base and is surrounded by commercial businesses—both should provide plenty of customers to the new healthy quick casual chain. Corner Bakery Café offers breakfast, lunch and dinner. Their specialties include fresh baked breads, desserts, signature sandwiches, soups and salads.
This project is indicative of the current retail market and the renewed interest by retailers in Northern Colorado and Fort Collins, especially by retailers who don't have stores in the area. Meanwhile, the City and General Growth Properties (GGP), owner of the Foothills Mall, are currently negotiating a redevelopment agreement which could be drafted in the next few months.
Redevelopment in the area will be done in stages. The addition of Corner Bakery Café is one piece of the puzzle. Last winter, GGP deconstructed the vacant J.C. Penney's space in anticipation of future changes in the retail center. Fast fact: the contractor was able to divert 77% of building debris from the landfill—concrete, steel, copper and aluminum building parts were sent to recycling centers.
