Fort Collins is known for its variety of restaurants, pubs, beer tasting rooms and very recently for its delicious sampling of spice shops, olive oil shop, tea shop and now cheese shop. This is not “fast food”—artisan cheeses and dried meats take time, many of the products are handmade, using the highest quality ingredients. Stocking local, national and international products, the retail shop is a huge supporter of local food initiatives, the food incubator and Community Supported Agriculture (CSA).
Owned and operated by Colorado State University alums, Dean Hines, wife Nancy and brother Nate Hines, this local trio fell in love with the idea of opening a cheese shop after traveling and working in other cities. For a taste of Europe, and finer food offerings, head to Welsh Rabbit.
